When your at the press start screen, hit L + R. If you did it properly you will here a vitory sound. Then all levels, airplanes and more will be unlocked.

Use TASCAS as a name, then choose the special selection on the options menu. You will be able to accesss HUD, Player Assist, and Cockpit Options!

Pause the game and press the X+Y buttons.

Successfully complete all of the blue impulse missions. Exhibition mode will now be unlocked.
